Directions:
Chop the onion and let it sit for at least 5 minutes to bring out its health benefits. Heat 1 tbs of broth in a medium soup pot. Then saute the onion in the broth on a medium heat for about 5 minutes, stir often.
Add the garlic and ginger and continue to saute for another minute.
Add curry powder and mix well with onions.
Add remaining broth, carrots, and sweet potato and simmer on medium heat until vegetables are tender, about 15 minutes.
Add the coconut milk then Blend in batches.
Add salt and pepper to taste then reheat gently before serving.
