This delicious Pepper & Parsnip soup recipe is warm, comforting, tasty and friendly to your digestive system.

Heat the oil in a heavy-based saucepan over medium heat, then sweat the onions for 2 minutes.
Add the parsnips and cook for a further 5 minutes, stirring occasionally. Add the chopped peppers and stir for 1 minute, then pour in the stock and add the nutmeg.
Simmer for 15-20 minutes until the parsnips are softened and then transfer to a blender.
