Great Digestive Food - Pepper Parsnip Soup Recipe

This delicious Pepper & Parsnip soup recipe is warm, comforting, tasty and friendly to your digestive system.

ParsnipParsnips are known to improve bowel function and to detoxify and cleanse the digestive tract.

Red PepperPeppers contain good antioxidants for reducing the damage caused by bacterial infection, as well as being an excellent intestinal cleaner.

Because the parsnips and peppers can taste quite sweet, this soup will be preferred by those of us who enjoy creamy, mild soups rather than more complex tasting soups.

Ingredients ... You will need

  • 5 tablespoons of olive oil
  • 1 medium onion, peeled and chopped roughly
  • 560 gm (20 oz) of parsnips, peeled and cut into chunks
  • 2 red peppers, washed, cored and de-seeded
  • 1.1 litres (2 pints) of vegetable stock
  • ½ teaspoon of ground nutmeg

Preparation and Cooking

Heat the oil in a heavy-based saucepan over medium heat, then sweat the onions for 2 minutes.

Add the parsnips and cook for a further 5 minutes, stirring occasionally. Add the chopped peppers and stir for 1 minute, then pour in the stock and add the nutmeg.

Simmer for 15-20 minutes until the parsnips are softened and then transfer to a blender.

Blend your pepper parsnip soup until smooth, then reheat and serve.

Finally, to really enjoy your Pepper Parsnip soup recipe, add a little salt and pepper to taste. Then reheat gently before serving in warm, deep soup bowls or soup mugs, with a large chunk of home baked bread free of processed ingredients.
